  • 1 teaspoon salt
  • 3-4 tomatoes, cubed
  • 1 teaspoon chili powder
  • 1 tablespoon coconut oil
  • 2 onions, chopped
  • 2 cups cubed carrots
  • Garnish –
  • Spring onion chopped


  • 3 garlic cloves, minced
  • 1-inch ginger root, minced
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • Salt to taste
  • Enough water


  1. Prepare the paste by blending all the water and paste ingredients in a food processor. Set aside. Heat the oil in a skillet over medium. Add the onions and sauté for 3-4 minutes. Add the paste, tomatoes, and carrots, and stir-fry for 6-7 minutes.
  2. Garnish everything with spring onions or scallions, and serve with rice, vegan bread, or noodles.
