Vegan Turmeric Risotto Recipe

  • 3 cups water or vegetable broth
  • 1 tablespoon nut butter
  • 1 cup finely chopped onion
  • 2 cloves of garlic, minced
  • 1 cup raw Arborio rice (or Jasmine)
  • 1 teaspoon turmeric
  • 2 tomatoes, coarsely chopped
  • 1 teaspoon paprika
  • ¼ cup fresh marjoram, chopped
  • 1 teaspoon salt
  • 1 cup green peas


  1. Melt the nut butter in a saucepan over medium heat. Add the finely chopped onion and sauté for 3-4 minutes.Add the garlic and sauté for 1 minute.
  2. After  Add the raw rice and stir well for 1 minute.
  3. Add in the tomatoes, peas, carrots, spices, and salt. Stir well to combine everything. Add in water or broth and cook the risotto, until all the liquid is absorbed.
  4. Add the marjoram in the last 5 minutes of cooking and stir once more.
  5. Serve the risotto in bowls and garnish it with basil or sage leaves.
