Vegan Tomato Soup with Thyme Recipe

This virtually effortless soup is an excellent accompaniment to sandwiches, pizza, and focaccia.


  • 1 tablespoon extra-virgin olive oil
  • ½ cup chopped onion
  • 1 large clove garlic, finely chopped
  • 1 (14.5 ounces) can whole peeled tomatoes, juices included
  • 1½ cups low-sodium vegetable broth
  • 1 (8-ounce) can no-salt-added tomato sauce
  • 2 teaspoons fresh thyme, or about ½ teaspoon dried thyme.
  • 1 teaspoon sugar.
  • ¼ teaspoon salt, or to taste
  • Freshly ground black pepper, to taste


  1. In a large saucepan or medium stockpot, heat the oil over medium heat. Add the onion and cook, stirring, until softened, 2 to 3 minutes. Add the garlic and cook, stirring constantly, 30 seconds.
  2. Add the remaining ingredients and bring to a boil over high heat. Reduce the heat to between low and medium-low, cover, and simmer 30 minutes, stirring occasionally.
  3. Working in batches, if necessary, puree the soup in a food processor fitted with the knife blade, or in a blender. Return to the pan and reheat as necessary.
  4. Serve warm.
