Vegan Three Greens Soup Recipe

Ingredients:

  • 1 head Romaine lettuce, torn by hand
  • 2 cups cabbage, shredded
  • 1 spring onion, chopped
  • 1 cup spinach, coarsely chopped
  • 3-4 cups water or broth
  • 1 teaspoon Cajun spice
  • 1 teaspoon paprika
  • A pinch of salt

Direction:

  1. Bring 4 cups of water to a boil in a large saucepan over high heat. Reduce the heat to medium-low. Add all the vegetables, spices and salt to the saucepan.
  2. Cover the saucepan and simmer the soup for 10 minutes. Top it with cilantro or parsley leaves. Serve the soup hot with toasted bread.
