Vegan Ratatouille Recipe


This  Vegan Recipe teaches you how to make the perfect Ratatouille, a traditional dish hailing from the French countryside.

  • 1 tablespoon olive oil
  • 1 cup red onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup zucchini, chopped
  • 1 cup yellow zucchini, sliced
  • 2 turnips, sliced
  • 1 cup eggplant, sliced
  • 1 red bell pepper, sliced
  • Salt and white pepper to taste
  • 1 tomato, sliced
  • one tablespoon dill
  • 1 tablespoon spice mix


  1. Heat the oil in a skillet and sauté the chopped onion for 3-4 minutes on low heat. Add in the garlic and sauté for a minute while stirring frequently.
  2. Slice the zucchini, eggplant, tomato, turnip, and red pepper, and add all the sliced vegetables to the skillet. Season the vegetables with salt and spices, and cook them for 7-10 minutes.
  3. Add the dill and white pepper and cook everything for 5 more minutes. The vegetables should be firm but tender.
  4. Serve the ratatouille with a baguette, rice, couscous, quinoa, or flatbreads.
