  • 1/2 (14 ounces) package low-fat extra-firm tofu, cubed
  • 1/4 cup low-fat mozzarella cheese, shredded
  • 1/2 lemon, juiced
  • salt and ground black pepper, to taste

Directions:

  1. Top the pita with the spinach, tofu, and mozzarella. Season with salt and pepper and sprinkle with lemon juice.
  2. Place in the toaster oven (4 – 5 minutes) or microwave (2 – 3 minutes) until cheese has melted to desired consistency.
