Vegan Peanut Cookies Recipe


These Vegan cookies got an exceptionally good response from testers. With lots of them saying they were the best thing we’d ever made! They’re really simple. With just six ingredients and they have almost no prep involved. So they’re ideal if you need a great treat in a hurry.

My tip: If you want to do something extra special with your cookies, try adding the ganache below – it’s amazing!

Makes: 10.


  • 150g porridge oats
  • 100g smooth peanut butter
  • 35g brown rice flour
  • 50ml maple syrup
  • 60g coconut oil, melted
  • 50g coconut sugar


  1. Preheat the oven to 190ºC (fan 170ºC). Line a large baking tray with baking parchment.
  2. Place all the cookie ingredients in a large bowl and mix until well combined.
  3. Use an ice-cream scoop or large spoon to scoop balls of the mixture on to the prepared tray, pushing them down a little to form cookie shapes.
  4. Bake in the oven for 10–15 minutes, until golden.
  5. Remove and leave to cool a little before enjoying.


If you want to turn these peanut cookies into sandwiches, place all of the ganache ingredients in a small pan and heat until they come together to form a paste.

Once very thick, remove from the heat and leave to cool. When cool, place the ganache into a piping bag and pipe equal amounts on to five of the cookies, before placing another cookie on top of each


  • 2 tablespoons cacao powder
  • 2 tablespoons maple syrup
  • 100g smooth peanut butter
  • 6 tablespoons almond milk

If you don’t like peanuts or just fancy changing these up, then switch the peanut butter for almond or cashew butter.
