Vegan Chilled Chinese-Peanut Noodles Recipe

Serves: 4 to 5 main-dish or 6 to 8 sidedish servings

You can make this tasty Asian pasta dish using Japanese soba or some noodles, as well.


  • 1 tablespoon toasted (dark) sesame oil
  • 1 tablespoon creamy peanut butter
  • 1 tablespoon sesame tahini
  • 1 tablespoon plain rice vinegar
  • 1 tablespoon pure maple syrup
  • 2 teaspoons low-sodium soy or tamari sauce
  • 1 teaspoon water
  • 1 to 2 large cloves garlic, finely chopped
  • ½ teaspoon ground ginger
  • Salt and freshly ground black pepper, to taste
  • 3 scallions, white and green parts, thinly sliced
  • 10 ounces dry gorge-free Chinese noodles or other thin Asian pasta, cooked according to package directions until just al dente, rinsed under cold running water, drained well


  1. In a large bowl, whisk together the sesame oil, peanut butter, tahini, vinegar, maple syrup, soy sauce, water, garlic, ginger, salt, and pepper. Stir in the scallions.
  2. Let stand a few minutes to allow the flavors to blend. Add the noodles and toss well to thoroughly coat.
  3. Serve at room temperature, or cover and refrigerate a minimum of 2 hours or up to 1 day and serve chilled.
