Vegan Brussels Sprout and Taters Recipe

  • 1 medium sweet potato
  • 1 daikon radish
  • 2 cups Brussels sprout, halved
  • 1 cup pumpkin
  • one cup sprouts
  • 1 teaspoon turmeric
  • 1 teaspoon paprika

Salmoriglio sauce:

  • 2 sprigs rosemary (1 teaspoon dried)
  • 1 tablespoon olive oil
  • 2 sprigs basil (1 teaspoon dried)
  • 2 sprigs parsley
  • ¼ cup lemon juice
  • 2 cloves of garlic, minced
  • A pinch of salt and tarragon
  • Water as needed


  1. Rinse the vegetables and peel the radish and sweet potato. Slice the radish and sweet potato into small chunks. Cut all the Brussels sprouts in half,  steam them along with the radish, and sweet potato chunks for 4-5 minutes.
  2. Prepare the sauce by adding all the sauce ingredients to a processor. Blend everything to a smooth paste by adding in water. Drizzle in the olive oil and set aside.
  3. Place the steamed vegetables on a plate. Dab them with a clean kitchen towel to remove excess water. Add the vegetables to a large bowl and pour the sauce on top. Sprinkle the spices and toss well. Serve with rice or noodles.
