Vegan Brown Lentil Ragout Recipe

  • 2 teaspoons olive oil
  • 1 onion, chopped
  • 1 tablespoon red chili powder
  • ½ teaspoon Cajun spice
  • 1 tsp. ground cumin
  • 2 tomatoes, pureed
  • 1 carrot, cubed
  • ½ dry brown lentils
  • 2 cups water


  1. Heat the olive oil in a saucepan over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until glassy. Add the carrots, spices, and salt.
  2. Puree the chopped tomatoes in a blender and add them to the saucepan along with water, cubed carrots, and lentils. Cover the saucepan with a lid and simmer for 20 minutes.
  3. Remove the saucepan from the heat and garnish the ragout with parsley or thyme leaves.
