Vegan Black Bean Soup Recipe

 This wonderful soup is so full of taste and goodness that you could probably survive off it alone if you had to and you’d probably never ever get bored to boot. As an added bonus, this soup stays good for a few days, so it’s easy to prepare beforehand so that you can have it when the mood strikes. This is a great addition to the busy person’s recipe book.  


  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3-4 bay leaves
  • 1 green bell pepper, chopped
  • 1 can diced tomatoes
  • 6 cups black beans, cooked
  • 2 cups vegetable broth
  • 1/4 cup fresh parsley
  • 2 tablespoons olive oil
  • 2 tablespoons vinegar, apple cider
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste


  1. Take a large stockpot, place it over a medium-high heat, add olive oil, and sauté the garlic, onion, and bell pepper until the onion begins to soften after about 5 minutes.
  2. Now add the vinegar, tomato, coriander, cumin, paprika, salt, pepper, and bay leaves and give it another 5 minutes.
  3. It is time to put in the beans as well as the broth. Reduce the heat so that the pan is only simmering. Give 15 minutes, with the lid on.
  4. Take out the bay leaves, spoon into the bowls and garnish with the parsley.
